The days here have been quiet. The good kind of quiet. Mostly. I'm getting better at it. Slowly finding my rhythm in this new house and new city. We begin our next phase of renovations soon and there are potential job prospects on the horizon. So, you know, I'm trying to enjoy it while it lasts.

garlicky kale with bacon and a poached egg
This recipe can be easily doubled or tripled.
1/2 tablespoon olive oil
1 slice of thick cut bacon, cut into bite sized pieces
1 slice of thick cut bacon, cut into bite sized pieces
3 cloves garlic, peeled and finely chopped
5 large kale leaves, trimmed and torn in bite sized pieces
1 egg, poached
salt/pepper to taste
Heat olive oil in a medium skillet. Add the bacon and cook until crispy. Remove bacon from pan with a slotted spoon and set aside. Add the garlic and cook until fragrant and just beginning to brown. Add the kale and cook until wilted. Remove from heat and combine bacon with kale mixture. Top with a poached egg and add salt/pepper as needed.
